Smashed Dijon Potatoes

These smashed potatoes have a tangy kick and contrast great with a tasty main fish entree.

Cook potatoes in a pot of boiling water until fork-tender, 12 minutes. Drain potatoes and return to the pot. Cook potatoes over medium heat, stirring, to remove excess moisture, 1 minute. Crush potatoes with a potato masher.

Stir in oil, Dijon, Parmesan, and salt until combined.
