Preheat broiler to high with rack 6 inches from element. Line a baking sheet with foil.

Drizzle both sides of bread slices with oil and place on prepared baking sheet. Lightly toast bread, about 2 minutes per side.

Top each slice of bread with 3 ham slices and ¼ cup Manchego. Return baking sheet to broiler to melt Manchego, 12 minutes. Top Manchego with grapes and parsley, then lightly squeeze lemon juice over top.
