Sautéed Greens & Tomatoes
This simple Southern-inspired side dish is super fresh and healthy. Made with collard greens, grape tomatoes, and thinly sliced red onion, this side of greens is as delicious as it is easy.
Collard greens taste like a cross between cabbage and kale, and make a hearty topper for these Southern Veggie Burgers.
Sauté onions and pepper flakes in oil in a sauté pan over medium-high heat until onions soften, 3 minutes. Stir in collards until starting to wilt; add broth. Simmer collards until tender, 8–10 minutes.
Stir in tomatoes and vinegar, then season with salt.
