Sauté garlic and ginger in avocado and sesame oils in a sauté pan over medium heat until fragrant, 1 minute.

Add bok choy, cut sides down, increase heat to medium-high, and sauté 2 minutes. Add water, salt, and pepper, cover pan, and steam bok choy 2 minutes. Remove lid; simmer bok choy until fork-tender and water evaporates, 23 minutes more.

Transfer bok choy to a serving bowl, drizzle with glaze, and garnish with sesame seeds.
