Rum-Runner Sweet Potatoes

Mashed sweet potatoes take on classic Caribbean flavor and pleasantly intoxicate the taste buds with just a touch of rum. Be sure to use a light rum and one that isn’t spiced. Darker rums are too intense for these sweet tubers. These potatoes deliciously pair with most grilled or roasted meats.

Cook sweet potatoes in a pot of boiling salted water until fork-tender, about 12 minutes. Drain potatoes and return to the pot over medium heat; stir 1 minute to dry.

Remove potatoes from heat; add rum, butter, and mint. Mash potatoes until smooth; season with salt and pepper.
