These Roasted Mushrooms are a downright delicious side dish. Roasting just happens to be the best method for cooking funghi, too, especially for a large group.

So everything is done at the same time, add the mushrooms to the oven during the last 10 minutes of roasting the pork.

Instructions

Preheat oven to 425°.

Toss mushrooms with oil and season with salt and pepper. Transfer mushrooms to a baking sheet and roast until tender and browned, and moisture is released and evaporated, about 20 minutes.

Melt butter in a small saucepan over medium-low heat. Add garlic; cook until fragrant, 34 minutes. Stir in parsley and lemon juice and toss with mushrooms while still hot; serve immediately.
