Roasted Italian Zucchini

This simple side dish of zucchini with lemon, Parmesan, adn red pepper flakes is great roasted, but for something a little different, try cooking it on the grill, too.

Instructions

Preheat oven to 425°.

Toss zucchini and squash with oil; season with salt and black pepper. Arrange vegetables in an even layer on a baking sheet; roast 2025 minutes.

Drizzle vegetables with lemon juice and transfer to a serving platter. Sprinkle vegetables with Parmesan, pepper flakes, and salt; serve immediately.
