Roasted Dijon Potatoes

Roasted potatoes are a welcome side dish on any table, but especially when tossed with a Dijon mustard and white wine vinegar. Sliced scallions add a bright, tangy finish.

Instructions

Preheat oven to 425°.

Toss potatoes with oil in a large bowl and season with salt and pepper. Heat a large ovenproof skillet over medium-high, then add potatoes, along with any oil remaining in the bowl. Sauté potatoes until starting to brown, 5 minutes. Transfer skillet to oven; roast potatoes until fork-tender, about 25 minutes.

Whisk together vinegar and Dijon in same large bowl. Add roasted potatoes and toss to coat. Stir in scallions just before serving.
