Roasted Carrots with Almonds & Scallions
With just a few staple ingredients, simple roasted carrots make an ideal, healthy, and easy-to-throw-together side dish — and it's ready in under an hour. Roasting carrots at a high temp makes them crisp-tender and brings out their natural sweetness.
Preheat oven to 425°. Line a baking sheet with parchment paper.
Toss carrots with oil; season with salt and pepper. Roast carrots on prepared baking sheet until fork-tender, 25 minutes.
Combine butter, scallions, and lemon juice in a bowl, add carrots and toss to coat. Top servings with almonds.
