Roasted Carrots & Sprouts
Looking for the perfect vegetable side dish? Carrots & Sprouts roasted with herbs and garlic and tossed with a sweet Dijon dressing make a wonderful accompaniment to just about any entrée.
Preheat oven to 425° with a baking sheet on lower rack.
Combine carrots, sprouts, onions, garlic, thyme, and rosemary in a bowl.
Add oil; toss to coat. Season carrot mixture with salt and pepper; transfer to hot baking sheet in a single layer.
Roast vegetables until fork-tender, about 15 minutes.
Meanwhile, heat butter, Dijon, and brown sugar in a microwave-safe bowl on high until butter melts; whisk in lemon juice. Toss roasted vegetables with butter mixture.
