Roasted Asparagus with Lemon
Asparagus brings a distinctive fresh flavor to any dish. While hothouses make it available year-round, when spring arrives so does this vegetable’s peak season.
When selecting asparagus, choose stalks with tightly closed dry tips that are firm to the touch and bright green in color.
Preheat oven to 425°.
Toss asparagus with oil, salt, and pepper; place on a baking sheet and roast 7 minutes.
Sprinkle asparagus with Parmesan and lemon juice before serving.
