Puff Pastry BLT with Boursin Spread

For a different take on a BLT sandwich, split flaky puff pastry and make a cremay spread with Dijon mustard, mayonnaise, and Boursin cheese to spread on the pastry. Layer with romaine, tomatoes, and bacon, and serve with alone as the main event or as a side dish with a creamy soup, like our Chicken Pot Pie Soup.

Preheat oven to 400°.

Combine mayonnaise, Boursin, and Dijon for the spread; season with salt and pepper.

Cut puff pastry into 3 strips along fold marks, cut strips in half crosswise, and transfer to a parchment-lined baking sheet. Bake pastries 15 minutes, then let cool 5 minutes.

Split pastries in half and cover cut sides with Boursin spread.

Top bottom pastries with romaine, tomatoes, bacon, and remaining puff pastry halves.
