Arrange two slices provolone on each of two bread slices; top with onions, then season with salt and pepper.

Top onions with arugula, prosciutto, remaining four slices provolone, and bread slices. Brush both sides of panini with oil.

Heat a grill pan (or panini press) over medium. Grill panini until golden, 46 minutes per side (or 5 minutes in panini press).
