Preheat grill to medium-high.

Slice potatoes lengthwise into ½-inch-thick planks; place in a large bowl. Toss with oil, salt, and pepper. Grill planks, covered, for 810 minutes, turning once.

Drizzle planks with more oil and toss with parsley before serving.
