Forget the penne pasta and elbow macaroni, this salad gets a fresh look with orzo, a pasta that’s shaped like grains of rice.
Pine nuts can be pricey, but the flavor and texture they add to this salad is well worth it. Store remaining nuts in the freezer so they last longer.
Cook orzo in a pot of boiling salted water according to package directions; drain and transfer to a large bowl.
Add spinach, roasted peppers, mozzarella, scallions, and pine nuts; toss to combine.
