Orzo Provençal with Tarragon Vinaigrette
What makes this Provençal, you ask? The combination of white wine vinegar, shallots, tarragon, Dijon, walnuts, and goat cheese make this easy side dish decidedly French. Widely used in French cooking, tarragon is known for its anise-like flavor. It can easily overpower a dish, so take care when using it.
Cook orzo according to package directions. Rinse orzo with cold water, drain well, and spread on a baking sheet to cool.
Whisk together oil, vinegar, shallots, tarragon, Dijon, and honey; season with salt and pepper.
Drizzle vinaigrette over orzo and toss to combine; season with salt.
Top orzo with walnuts and goat cheese; garnish with additional minced tarragon, if desired.
