Orzo & Summer Squash with Ranch Dressing

So the squash is crisp-tender, boil it just 2 minutes with the orzo.


Cook orzo in a pot of boiling salted water according to package directions, adding squash to the pot during the last 2 minutes of cooking. Drain orzo and squash, rinse with cold water, drain again, then transfer to a bowl.

Whisk together mayonnaise, ranch seasoning, and parsley; stir into orzo mixture, season with salt and pepper, and chill until ready to serve.
