Preheat broiler to high with rack 6 inches from element.

For the vinaigrette, whisk together vinegar, oil, Dijon, oregano, and pepper flakes.

For the salad, toss bread with oil, then broil on a baking sheet until lightly golden, 3 minutes.

Toss giardiniera, olives, salami, mortadella, provolone, tomatoes, parsley, and bread with vinaigrette
