Boil broth, lemon juice, honey, cumin, and cinnamon in a saucepan; keep warm over low heat.

Sauté ginger and garlic in oil in a saucepan over medium-high heat until fragrant, 30 seconds. Add couscous; stir to coat with oil. Cook couscous, stirring constantly, until lightly toasted, about 2 minutes.

Off heat, pour hot broth mixture over couscous, cover, and steam until liquid evaporates, 57 minutes; fluff with a fork.

Stir in cucumber, pistachios, apricots, and mint; season with salt and pepper.
