This classic rice side dish is super simple and deliciously fresh. Serve it alongside any Mexican menu.
Heat oil in a saucepan over medium. Add onion and sweat until softened, 3 minutes. Add rice, garlic, and cumin and cook until fragrant, 1 minute.
Stir In broth and tomatoes and bring to a boil over medium-high heat. Cover pan, reduce heat to low, and simmer rice until tender, 15–20 minutes; let stand 5 minutes. Stir in cilantro and season rice with salt and pepper.
