Mashed Sweet Potatoes with Lime, Garlic & Jalapeño

Like any good fall, winter, or holiday meal, mashed potatoes are pretty much a required side dish. Here, sweet potatoes stand in. And with plenty of sour cream and butter these sweet spuds have a super-creamy texture, plus jalapeño and lime pop the flavor.

As with any dish containing jalapeño, if you want these potatoes to have a spicy kick, don’t remove the ribs and seeds.

Instructions

Cook sweet potatoes in a large pot of boiling salted water until fork-tender, 1215 minutes.

Drain potatoes; return to pot and cook over low heat, stirring to remove excess moisture, 2 minutes.

Add sour cream, butter, garlic, jalapeño, zest, and lime juice to pot, then mash potatoes to desired consistency; season with salt.

Dry out the sweet potatoes after boiling so they can better absorb the sour cream and butter.
