Mashed Cauliflower

Mashed Cauliflower isn't new, but it makes a great alternative for mashed potatoes, which tend to be high in carbs and fat. This 4 ingredient recipe is simple,tasty , and super creamy.

Boil cauliflower in salted water until fork-tender. Drain cauliflower and dry it in a hot pan over medium heat, about 1 minute. Do not allow cauliflower to brown.

Blend cooked cauliflower with butter and milk in a food processor until smooth. Garnish with chopped chives. Serve with Pan-Roasted Pork Chops with Apricot Sauce.
