Mashed Cauliflower with Dijon & Scallions
Warm and creamy, you won’t miss the potatoes with this side dish. Plus, substituting cauliflower for potatoes turns this into a low-carb option.
Steam cauliflower and garlic in a steamer basket set over a pot of boiling water until softened, 15–20 minutes.
Transfer cauliflower and garlic to a food processor; purée. Add butter, half-and-half, and Dijon; pulse until combined, then season mixture with salt and pepper.
Stir scallions into Mashed Cauliflower before serving.
