This southern corn salad is a quick and easy side dish that's perfect for making ahead. Serve with fish, seafood, and chicken.
Cook bacon in a sauté pan over medium heat until crisp. Pour off all but 1 Tbsp. drippings. Add bell pepper and onion; cook until nearly soft, about 5 minutes.
Deglaze pan with sherry, scraping up any brown bits. Cook until sherry is nearly evaporated. Stir in corn, cream, and Tabasco; simmer until mixture thickens, 3–4 minutes. Season salad with salt and pepper, then stir in scallions. Serve salad with Bourbon-Glazed Pork Kebabs.
