On a hot summer night, nothing hits the spot like a cold salad, especially one loaded with sweet lobster and lemony freshness.

Look for cold, cooked lobster meat at your fishmonger or seafood cooperative. If you can't find it, steam your own whole fresh lobsters or frozen tails.


Combine lobster, celery, celery leaves, scallions, mayonnaise, zest, lemon juice, tarragon, pepper, and salt; chill at least 30 minutes.

Arrange lobster salad on each cucumber half when ready to serve.
