Ingredients

The liquid in popover batter creates steam, which puffs the popovers up. Don’t open the oven door while they’re baking — they’ll deflate!

Instructions

Whisk together eggs, milk, 1 Tbsp. butter, parsley, zest, salt, and cayenne in a bowl. Whisk in flour just until combined. Cover batter and chill at least 30 minutes.

Preheat oven to 450°. Place a popover pan on a baking sheet and heat in oven, 10 minutes. Remove pan from oven and coat cups with 1 Tbsp. butter. Fill each cup halfway with batter and bake 15 minutes. Reduce heat to 375° and bake popovers 20 minutes more. Serve popovers immediately.
