Lemon Rice with Grilled Corn

Side Dishes

Lemon Rice with Grilled Corn

Lemon and sweet corn add a bright, fresh flavor to plain old white rice. Although the recipe calls for fresh corn, in a pinch you can use frozen sweet corn and char it in a skillet (preferably cast iron). Converted rice retains more nutrients, contains less starch, and is less sticky than most white rice.
