Lemon-Parsley Crostini

Bright lemon and grassy parsley make these crostini perfect for spring and summer. Serve with soup, like Cioppino with Cod, Mussels & Shrimp, as a dipper.

Rubbing a halved garlic clove onto the crostini is an effective way to add flavor. The garlic really permeates, so a few strokes on each crostini is plenty.

Instructions

Preheat broiler with rack 6 inches from element.

Brush each baguette slice with oil. Arrange slices on a baking sheet and broil until crisp, 12 minutes per side. Rub each crostini with cut side of garlic.

Combine parsley, zest, Parmesan, salt, black pepper, and pepper flakes. Divide mixture evenly among crostini (about 1 tsp. each).
