Quick-Pickled Vegetables are an essential Korean side dish known as mit banchan. These veggies are not only quick and easy to make but also big in flavor, and they'll round out every meal. For optimal flavor, start the pickled vegetables first, then chill them while making the Korean Chicken Skewers.


Whisk together vinegar and sugar in a bowl.

Toss celery, cucumbers, carrots, and onion with vinegar mixture; season with salt, then chill until ready to serve.
