Heat butter in a nonstick skillet over medium. Add pecans and maple syrup and cook until nuts begin to brown, 34 minutes; transfer to a plate to cool. Season nuts with ¼ tsp. salt.

Melt jelly in a saucepan for the dressing. Stir in shallots, balsamic, and ½ tsp. salt; simmer 1 minute, then transfer to a bowl to cool.

Whisk in yogurt, oil, and poppy seeds; season with pepper.

Toss kale, grapes, apple, and pecans with dressing.
