Jamaican Salad

Lean and nutritious, catfish is the perfect catch for dinner when served with this refreshing tropical Jamaican Salad. Pineapple balances the heat, and grilling the fruit briefly before tossing it into an oil-free salad not only makes for a light meal, but intensifies the sweetness.

If you can’t find mini sweet peppers, try red bell peppers instead.

Preheat grill to medium-high. Brush grill grates with oil.

Grill pineapple rings, covered, until marked, 2 minutes per side. Remove pineapple from grill and cut into bite-sized pieces.

Whisk together pineapple juice, ginger, and jerk seasoning for the dressing.

Combine lettuce, peppers, coconut, and pineapple in a large bowl, and toss with dressing.
