If you can’t find mini sweet peppers, try red bell peppers instead.

Instructions

Preheat grill to medium-high. Brush grill grates with oil.

Grill pineapple rings, covered, until marked, 2 minutes per side. Remove pineapple from grill and cut into bite-sized pieces.

Whisk together pineapple juice, ginger, and jerk seasoning for the dressing.

Combine lettuce, peppers, coconut, and pineapple in a large bowl, and toss with dressing.
