Holiday Salad with Blue Cheese, Toasted Pecans & Apple-Cinnamon Dressing

You’ll be amazed by how quickly and easily you can turn an ordinary side dish into an extraordinary one. First, a homemade apple-cinnamon dressing brings seasonal flair to a bowl of mixed salad greens. Add in fresh apples, toasted pecans, blue cheese crumbles, and bacon, and even your most carnivorous guests will eat their greens.

Cook bacon in a skillet until crisp; drain on a paper-towel-lined plate. Pour off all but 1 Tbsp. drippings from skillet.

Sauté shallots in drippings until soft, about 1 minute. Whisk in apple juice concentrate, oil, mustard, and cinnamon; season with salt and pepper. Remove skillet from heat; let dressing cool slightly.

Toss together greens, apple, pecans, blue cheese, and bacon. Drizzle the dressing over the salad and toss to coat. Serve salad immediately.
