Haricots Verts with Lemon & Apricots
French for green beans, haricots verts tend to be smaller and sweeter than regular green beans, plus they have no strings to remove. This is a great side dish for a light fish dinner.
Heat oil in a sauté pan over medium-high. Add apricots and garlic; cook 1 minute. Add haricots verts and cook to heat through, 2–3 minutes. Stir in zest and lemon juice; season with salt and pepper flakes. Garnish haricots verts with goat cheese.
