Grilled Potato Salad
Grilled potatoes are every bit as tasty as baked or fried, and they cook up quick. Best of all, they can be grilled right alongside the steak.
Preheat grill to medium-high. Brush grill grate with oil.
Whisk together vinegar, shallots, Dijon, and honey; season with salt and pepper. Drizzle in ⅓ cup oil, whisking constantly to emulsify.
Toss potatoes with 2 Tbsp. oil and season with salt and pepper. Grill potatoes on one side until slightly charred, 2–3 minutes. Flip potatoes and continue grilling until cooked through, 2–3 minutes more. Transfer potatoes to a large bowl and toss with tomatoes, scallions, and vinaigrette.
