Green Beans Provençal

Spruce up your ordinary green bean side dish with ingredients often found in Southern French cooking like shallots, garlic, and tomatoes. We all know the Thanksgiving sides are really the star of the table, but preparing the entire meal can be overwhelming. That's where this quick and easy dish really shines, as it can be ready in less than 20 minutes.

The woody stems of green beans can be tough to eat. Remove them by snapping them off or slicing them with a paring knife.

Instructions

Heat 1 Tbsp. oil in a skillet over medium-high. Add green beans and cook until starting to brown, 3 minutes. Add water, cover skillet, and reduce heat to medium; cook beans 3 minutes. Remove lid and push beans off to one side of skillet.

Sauté shallots, garlic, and pepper flakes in remaining 1 Tbsp. oil in cleared half of skillet, 1 minute. Stir in tomatoes and cook until they start to soften and release some liquid, 2 minutes.

Off heat, stir in vinegar, then season beans and tomatoes with salt and black pepper.
