Greek Salad with Goat Cheese
Everyone needs a recipe for a Greek salad, right? Classic Greek flavors like crisp cucumbers and creamy goat cheese are tossed together with toasted homemade croutons make this a Greek equivalent of panzanella.
Heat 1 Tbsp. oil in a nonstick skillet over medium-high. Add bread cubes and toast 3 minutes.
Whisk together remaining 2 Tbsp. oil, lemon juice, tomato paste, oregano, salt, and pepper for the vinaigrette.
Combine salad greens, sliced tomato, cucumber, olives, and goat cheese. Add croutons and toss salad with vinaigrette before serving.
