Gouda Mashed Potato Casseroles

Instructions

Preheat oven to 400°. Coat four 1-cup casserole or soufflé cups with nonstick spray.

Cook bacon in a skillet until crisp; drain on a paper-towel-lined plate.

Boil potatoes in a pot of salted water until fork-tender, 12 minutes. Drain potatoes, return to the pot, and dry over medium heat 1 minute. Off heat, add milk, sour cream, and butter. Mash potatoes until smooth, then stir in bacon and white pepper; season with salt.

Divide half the potatoes among casseroles, top with half the Gouda, spread with remaining potatoes, then top with remaining Gouda. Bake casseroles until golden, 25 minutes; garnish with chives.

Make-Ahead Directions: Cover and chill assembled casseroles up to 1 day before baking and serving.

To prevent the potatoes from being too watery, cook them a little longer in a dry pot after draining.
