Preheat oven to 400°.

Brush baguette slices with oil on both sides, season with salt and pepper, and arrange on a baking sheet; bake until lightly browned, about 5 minutes per side.

Combine goat cheese, apricots, and honey and spread on baguette slices; bake until cheese bubbles, about 2 minutes.

Toss greens with vinegar and 1 Tbsp. oil; season with salt and pepper. Divide greens among tartines.
