Ginger Glazed Carrots

This recipe makes a super tasty side dish. Look for heirloom carrot varieties that are a hot trend now at farmers' and specialty markets.

If you can find them, use baby carrots with their greens still attached, but steer clear of the snack-sized ones.

Whisk together water, ginger, and sugar in a large saucepan over high heat; bring to a boil.

Add carrots and return to a boil. Simmer, flipping occasionally, until carrots are tender but not mushy and liquid has nearly evaporated, 10–15 minutes.

Stir in butter until melted and season with salt and pepper.
