Garlicky Spinach & Lentils with Feta Cheese

When washing the spinach, don’t spin it dry. Excess water on the leaves helps the spinach steam and wilt.
Cook lentils with smashed garlic in a saucepan according to package directions; drain and discard smashed garlic.
Sauté minced garlic in oil in a sauté pan over medium-high heat until fragrant, 1 minute. Stir in spinach, cover pan, and cook until spinach wilts, tossing occasionally, 2 minutes. Stir in lentils and season with salt and pepper.
Top servings with feta.
