Garlicky Green Beans
To keep most of their color and texture but cut the raw starchiness, blanch the beans briefly, then immediately plunge in ice water to quickly stop their cooking.
Blanch beans in a large pot of boiling salted water until nearly tender, 5 minutes. Shock beans in a bowl of ice water and drain thoroughly.
Melt butter in a large sauté pan over medium heat. Add garlic and cook until soft, about 2 minutes. Add beans and sauté until heated through, about 3 minutes; season with salt and pepper.
