Mashed potatoes are a must-have side dish for just about any holiday table. Change up your usual spuds by adding creamy garlic and fine herb cheese. It couldn’t be any more effortless, or taste any better.

You can peel and cut the potatoes ahead, but keep them covered with cold water in the fridge. Or if you make this side dish ahead, reheat it in a double boiler.


Cook potatoes in a large pot of boiling salted water until fork-tender, about 15 minutes. Drain potatoes; return to pot and cook over medium heat, stirring, to remove excess moisture, 1 minute.

Add cheese, milk, and butter; crush with a potato masher to desired consistency.

Stir in chives and season potatoes with salt and pepper.


Drying potatoes evaporates excess moisture so they can better absorb the cheese, butter, and milk.


Add softened cheese to dried potatoes. It will melt and become creamy from the residual heat.
