You can peel and cut the potatoes ahead, but keep them covered with cold water in the fridge. Or if you make this side dish ahead, reheat it in a double boiler.

Instructions

Cook potatoes in a large pot of boiling salted water until fork-tender, about 15 minutes. Drain potatoes; return to pot and cook over medium heat, stirring, to remove excess moisture, 1 minute.

Add cheese, milk, and butter; crush with a potato masher to desired consistency.

Stir in chives and season potatoes with salt and pepper.

Drying potatoes evaporates excess moisture so they can better absorb the cheese, butter, and milk.
