Salting the zucchini releases excess water, but be sure to rinse and dry it well.

Instructions

Toss zucchini with 1 Tbsp. kosher salt in a strainer set over a bowl; let sit 20 minutes.

Meanwhile, whisk together lemon zest, lemon juice, olive oil, garlic, and honey for the vinaigrette; season with salt and black pepper.

Rinse zoodles; dry in a salad spinner.

Toss together zoodles, basil, pecorino, and pine nuts with vinaigrette; serve immediately.
