Farro & Watercress Salad
For a filling vegetarian salad option, try this Farro & Watercress Salad. It makes a wonderful light dinner or side dish for our Swordfish Kebabs with garlic parsley sauce. With chewy farro, peppery watercress, Pecorino Romano, and cannellini beans, the salad gets a briny, bright finish with capers, lemon, and fresh parsley.
Toast farro in a saucepan over medium-low heat until fragrant and nutty, about 2 minutes, then cook according to package directions.
Whisk together vinegar, oil, and zest for the vinaigrette; season with salt and pepper.
Toss farro, watercress, beans, parsley, shallots, and capers with vinaigrette; top salad with Pecorino Romano.
