Curried Chicken Salad
Short on time? That’s no reason to sacrifice flavor. A simple curried dressing brings loads of it to this quick and delicious chicken salad.
Serve this salad in pita pockets, on croissants, or in lettuce wraps.
Combine mayonnaise, preserves, curry powder, lime juice, salt, and cayenne in a large bowl.
Add chicken, mango, celery, scallions, and cilantro to mayonnaise mixture; toss to coat. Stir cashews into salad just before serving.
Peel mango with a vegetable peeler, then cut the flesh away from the flat pit and dice.
