A special product of Spain, Marcona almonds are rounder and sweeter than regular almonds. They can be found in specialty grocery stores.

Instructions

Whisk together oil, orange juice, vinegar, shallots, and Dijon; season with salt and pepper.

Toast almonds in a small skillet over medium heat until lightly browned and fragrant, stirring frequently, 710 minutes. Remove almonds from pan to cool, then coarsely chop.

Toss together salad greens and parsley. Add almonds and toss with vinaigrette to combine.
