Chive Mashed Potatoes & Parsnips
As comforting as can be, these fluffy chive mashed potatoes and parsnips, made simply with milk and butter, are versatile enough to be served with just about anything.
Boil potatoes and parsnips in a large pot of salted water until tender, 10–15 minutes. Drain, return vegetables to the pot, and dry over medium heat for 1 minute.
Off heat, mash with half-and-half, butter, and chives. Season with salt and pepper.
