Chipotle Mashed Potatoes
Bring to the table a side of smoky-spicy mashed potatoes. They’re laced with chipotles for southwestern flair and made with tangy buttermilk to keep calories low. It’s all the little things that make this menu special, so finish them off with tangy lime crema.

For the crema, whisk together sour cream and lime juice; season with salt. Chill crema until ready to serve.
For the potatoes, cook potatoes in a pot of boiling salted water over high heat until tender, 15 minutes. Drain potatoes, return to pot, and dry briefly over medium heat.
Off heat, mash potatoes to desired consistency, then add buttermilk, scallions, butter, and chipotles; season with salt. Top each serving of potatoes with crema.
