Cheddar Mashed Potatoes with Bacon
This side dish will ensure a full belly—with bacon, cheese, scallions and creamy ingredients, this healthy loaded mashed potato recipe is sure to be a family favorite.
Greek yogurt is strained before it's packaged to remove some of the excess whey. It's creamier and thicker than other types of yogurt.
Sauté bacon in a skillet until crisp; drain on paper towels.
Cook potatoes in a pot of boiling water, covered, until tender, 12–15 minutes; drain. Return potatoes to the pot; stir over medium heat to remove excess moisture, about 1 minute. Remove pot from heat; add milk, yogurt, and salt. Mash potatoes until smooth.
Stir in 2 Tbsp. Cheddar and bacon. Garnish potatoes with remaining 1 Tbsp. Cheddar and scallions.
