Caribbean Rice

Toss a cilantro, chile, and lime purée with plain rice to create a zesty rice side dish that's perfect with Caribbean-inspired menus.

Fresno chiles are similar to jalapeños in size and heat. Include some of the seeds if you prefer a hotter dish.


Purée cilantro, zest, lime juice, garlic, oil, and chile in a food processor.

Cook rice with water according to package directions until liquid is absorbed, about 20 minutes. Let rice stand 5 minutes, then fluff with a fork.

Stir cilantro purée into rice.
